This Anaerobic Fermentation release features Bourbon Rojo cherries from Colombia’s Esmeralda Negra farm, carefully hand-selected and sealed in an oxygen-free, temperature-controlled, pH-regulated environment for 120 hours. This process transforms the coffee from the inside out, creating flavors that evolve with every sip.
From the first pour, experience a cascade of fragrances, jasmine and wildflowers, followed by tasting notes of lychee, apricot, and white grapes that continue to unfold as the coffee cools. Each cup is a celebration of flavor, a coffee that truly changes as you drink it.
This is an extremely rare, limited offering, roasted in ultra-small batches to ensure the freshest, liveliest expression possible.
